Ricotta pear tart12/13/2023 Scatter the crumble topping over the pears, return to the oven and bake for 30-40minutes. Place ricotta mixture in pie shell, then arrange pear slices on top. Cool tarts slightly, then arrange raspberries on top. Bake in preheated oven for 25 minutes, until golden brown. Pour an equal amount of mixture into each tart pan. Its loaded with fresh seasonal pears and is perfect for a cozy fall evening at home. In a medium mixing bowl, combine ricotta, sugar, egg, orange rind, vanilla extract, and nutmeg. Line a flan dish with the shortcrust pastry, and blind-bake for 10-15 minutes in a medium oven. This simple Ricotta Pear Cake is light, moist, and scented with warm rosemary and orange. Mix baking powder through brown sugar, then mix sugar mixture and flour mixture together. Rub the butter through flour until it forms pea-size lumps. Handle quickly and gently – too much rubbing or kneading will make the pastry tough. Let it drain without squeezing (squeezing makes the cheese grainy instead of soft and creamy) – the longer the draining, the firmer the cheese. This tart is delicious, and very easy to make (and you gotta love a good old-fashioned crumble top!). I know you can buy ricotta, and you can buy shortcrust pastry, but it’s so much more satisfying (and tastier) to make your own. Light fresh ricotta with a sprinkle of raisons, baked in a buttery shortbread case topped with a sticky sweet, caramel glaze.
